Meaty Tender Ribs

8 meaty ribs
salt and pepper
1 tablespoon olive oil
2 garlic cloves, minced
2 medium carrots in chunks
1 small onion, chopped
2 celery stalks, sliced
1 cup white wine
2 cups hot beef broth

Add salt and pepper to the ribs, place them in a heavy pot and brown them in very hot olive oil 
Add the roughly chopped vegetables
Add the 2 cups of hot beef broth and the cup of wine, cover and simmer 1 hour or until the meat is tender
Remove meat aside, blend vegetables and liquids to a fine sauce
Serve with Mushroom Risotto and Cucumber Salad
