Cucumber Salad

  1. English cucumber
  2. 1/2 teaspoon salt
  3. 1 teaspoon freshly ground black pepper
  4. 1/3 cup apple cider vinegar
  5. 1/3 cup extra virgin olive oil
  6. 1/3 cup milk
  7. 1 tablespoon chopped cilantro
Cut it as this and add salt
Place them in a colander
Leave them to drip some water

It's the same dressing I used for the Brando Lettuce:

In a tall container place black pepper and salt, mix and add vinegar, mix well again, add olive oil mix and add the milk whisking all the time until it thickens. If you have an immersion blender use it instead, it's faster and easier.

Pour vinaigrette over cucumbers, add chopped cilantro mix well and serve.

YUMMY!

Serve them with the Meaty Tender Ribs and with Risotto.
